Farmshelf Salad Dressing
Mince a small shallot as finely as you possibly can. Put in a small jar (for which you have a lid) and add enough red wine vinegar to cover the shallot pieces. Let sit for 30 minutes, add a half-teaspoon mustard and enough olive oil to triple the volume, and whisk or put the lid on and shake. (If you’re the kind of person who likes precise measurements, use 1/3 cup vinegar and 2/3 cup oil.). V.v. important: salt the salad not the dressing!
